I love sweet potatoes

I did the usual 50 minutes of cardio split up between running on the treadmill, ET, and stairmaster plus abs and arms and stretching. I tried making some almond butter in my food processor before I went, but I don’t think it’s how it’s supposed to be. oh well, I’ll still eat it! It’s fluffier than creamy/buttery sort of. I had an apple with 2 Tbsp of my AB before going to the gym. After the gym I made a quick dinner because the Pen’s game would be on soon! I heated up a sweet potato in the microwave and popped it into the toaster oven to make sweet potato dollar fries with S&P. I also made 1/2 cup dry of whole wheat macaroni and mixed in a 1.5 cup crushed tomatoes (I like sauce!!), 1/2 cup navy beans, broccoli, mushrooms, and some oregano, thyme, salt, pepper, and garlic powder for a quick pasta dish. I ate it much quicker than I would have liked, and I’m still kind of full four hours later. I think I had too much sodium today, and that may be the cause. My pre-workout snack and dinner totaled: 739 calories, 11 g fat, 30 g fiber, and 26 g protein.
Yay for the Pen’s win!! I’m off to bed and am looking forward to sort of sleeping in tomorrow. Good night all!

When you cook pasta sauce do you cook the broccoli and the spices in with the sauce or add those separately? what type of pan do you use? I know nothing about cooking and you seem to know a lot! Especially for our age (college), it’s very impressive!
Sorry one last question, but do you use frozen broccoli? I find fresh takes a while to prepare and never stays fresh very long- any tips?

Loving the sounds of that pasta dish. I haven’t made anything with macaroni for a while, might be just about time to give that one a try!

Oh your food looks SOOO darn good! I know I sound like a broken record, because I always say that… but it always DOES look so good! Ooh, and I just tried almond butter this morning (mine wasn’t homemade though). I loved it to pieces! Definitely a new staple in my diet.
I’m still going to watch my wonderful Stars tonight… but I kinda know it’s over. Oh well, they gave us a good ride. I would like to see ONE win, though, against Detroit, even if it only serves to make Detroit more tired so that hopefully your Pens can BEAT THEM UP come finals’ time!

I cook the past first and drain it, then I add in my sauce, broccoli, beans, spices, etc. and cook until everything is heated! I use a small saucepan. You could do everything separately, but I find this method works well and especially love that I only have to clean one thing! I use fresh broccoli. My family buys a huge bag of it from Sam’s club and we always finish the whole bag. We go through a lot! Frozen would work fine though, and if that’s what I had on hand I would use that. Either or! and really?? I feel like I know very little about cooking, so thanks for the compliment!!
