It’s a sunny day!!  Still cold out though, but the sun always makes me smile.  I soaked 1/4 cup steel cut oats last night to have this morning.  I love the chewiness of them!  I made the same pumpkin oats again but with steel cut.  1/2 cup pumpkin, cinnamon, a sliced banana, 1 Tbsp walnuts, 1 Tbsp flaxseed meal, 1/2 cup almond milk, a spoonful of PB, and a tsp brown sugar.  It was sooo good!  :-)  I had my vitamins and a cup of spiced chai tea as well.  Have a Happy Easter everyone!

 

For dinner I sauteed two plum tomatoes (chopped), garlic, red onions, and spinach in some EVOO with oregano, thyme, basil, lemon juice, and lemon seasoning.  I added this to my leftovers from last nights dinner, which was about a cup of whole wheat penne pasta, a couple broccoli florets, and not many diced tomatoes.  It was better than last night’s dinner!  I forgot to take a picture of it :-(  I was in a hurry to go to my boyfriend’s house.  I packed some snacks to take with me…3/4 cup Ezekiel 4:9 whole grain golden flax cereal, 3/4 cup almond milk, lots of veggies (cucumber slices, tomato slices, carrots, and celery), 1/4 cup (2 oz) of the hummus I made this afternoon, and 1 square of Endangered species supreme dark chocolate!  The cereal was great.  There is no sugar, so it’s definitely not sweet, but there’s something I love and enjoy about when a food is so wholesome and natural.  It feels so good!  The hummus was okay.  It could use more flavor, but I have a whole jar of tahini to get the recipe down!  Have a Happy Easter everyone!

I had a very large, juicy orange before the gym.  I absolutely love oranges!  I did 10 minutes on stationary bike, 30 minutes on treadmill (10 walk, 20 run), and 20 minutes ET.  Great workout!  I was very anxious to try my Ezekiel 100% whole grain bread when I got home, and I thought what better to try it with than PB and honey!  haha.  I also had a cup of almond milk and some Bigelow Spiced Chai tea.  To tell you the truth, I wasn’t that impressed by the bread.  The slices were smaller than I would like, and the crust was kinda hard.  I don’t know if that was from being frozen and popping it in the microwave?  The middle was great though.  Nice and chewy.  Perfect.  I’m still upset about my Brownberry :-(  My family thinks I’m nuts because I’m concerned about HFCS, hydrogenated oils, animal products, etc.  I can understand this may be because I used to have an eating disorder, but in no way do I have the same mindset as I did then.  I simply want to eat to live a long healthy life, and what I put into my body is the one thing I can control to maximize my health.  Besides, I enjoy eating this way so much more, and I feel a lot better and energized.  It upsets me that they dislike it.  :-/
