It’s a sunny day!!  Still cold out though, but the sun always makes me smile.  I soaked 1/4 cup steel cut oats last night to have this morning.  I love the chewiness of them!  I made the same pumpkin oats again but with steel cut.  1/2 cup pumpkin, cinnamon, a sliced banana, 1 Tbsp walnuts, 1 Tbsp flaxseed meal, 1/2 cup almond milk, a spoonful of PB, and a tsp brown sugar.  It was sooo good!  :-)  I had my vitamins and a cup of spiced chai tea as well.  Have a Happy Easter everyone!

 

This morning I was up at 7:30 to be at the bus by 8:05 to take back to school in Pittsburgh.  What another yucky rainy day.  It’s so cloudy, but spring is coming!!  I walked to the dining hall after getting off the bus around 8:40 to have some breakfast since I need to use up my meal plan :-(.  Basically, the breakfast options are: muffins, bagels, pastries, eggs, bacon, waffles, french toast, omelets, sugary low fiber cereals, oatmeal, cream of wheat, yogurt, and some fruit.  The only things I would be interested are an omelet and oatmeal…and of course fruit.  They use (I swear) 1/4 cup oil to cook an omelet in, so that option was out.  And what’s better than a nice warm bowl of oats?!  However, they definitely use instant oats because they were mucousy as some people call it.  ehhh.  Still okay though.  I took about a 3/4-1 cup of cooked oatmeal, 1 Tbsp of raisins, and about a tsp of light brown sugar.  I sliced up a banana too and kind of mixed that in as well.  It seemed like they added sugar in the cooking process (gross) because it was sweeter than I like it.  It wasn’t really that bad though!   (Not a good picture - sorry!)  I will be heading to the gym now for 40 minutes of ET/treadmill before my African Dance class at 11:30.  I will definitely have a snack in between because this breakfast was only about 300 calories, plus some if there was in fact sugar in there.
