My interview went well!  I made a quick lunch afterwards before heading to the grocery store with  my dad.  I made a PB and honey sandwich with, carrots, strawberries, and an orange on the side.  I picked up some things to make dinner tonight.  I haven’t decided what I want to make yet, but I’m choosing between two recipes from Veganomicon!  I’m soo excited!  I gotta run to the gym now for a workout, and I want to make it by 4 to watch Oprah!  See you later!  Ugh, blurry picture :( 

I am taking a break from doing work today.  I was up until 1 am last night typing my paper, so I feel I need a day to slow down and relax.  I have another paper due Tuesday though :-(  Maybe I’ll start it later haha.  Breakfast was a delicious bowl of pumpkin steel cut oats again.  I can’t get enough of it…I wonder if I will ever get sick of it.  I can’t imagine that happening.  I never want cold cereal for breakfast, but perhaps things could change if the weather ever gets warm!  It’s getting there :-)  Lunch in the dining hall consisted of stewed tomatoes over rice…I think basmati rice?  Plus, I had a small apple, two little chunks of fresh pineapple, and an orange wedge.  That wasn’t enough, so when I got back to my room I ate a Silk live blueberry yogurt.  Shortly after that I had a Pecan Pie Larabar….Satisfied.  Now, I’m brewing a cup of tea.     

 

 

I had a very large, juicy orange before the gym.  I absolutely love oranges!  I did 10 minutes on stationary bike, 30 minutes on treadmill (10 walk, 20 run), and 20 minutes ET.  Great workout!  I was very anxious to try my Ezekiel 100% whole grain bread when I got home, and I thought what better to try it with than PB and honey!  haha.  I also had a cup of almond milk and some Bigelow Spiced Chai tea.  To tell you the truth, I wasn’t that impressed by the bread.  The slices were smaller than I would like, and the crust was kinda hard.  I don’t know if that was from being frozen and popping it in the microwave?  The middle was great though.  Nice and chewy.  Perfect.  I’m still upset about my Brownberry :-(  My family thinks I’m nuts because I’m concerned about HFCS, hydrogenated oils, animal products, etc.  I can understand this may be because I used to have an eating disorder, but in no way do I have the same mindset as I did then.  I simply want to eat to live a long healthy life, and what I put into my body is the one thing I can control to maximize my health.  Besides, I enjoy eating this way so much more, and I feel a lot better and energized.  It upsets me that they dislike it.  :-/

Two hours after my breakfast I knew I was going to get hungry during my class, so I had a Luna Caramel Nut Brownie bar (which I know may contain traces of dairy :(  ), a cup of green tea, my multi, and B12 while doing some microbiology (worst class ever…the material I was reading really worked up my appetite-NOT) labs before heading to class.  It was good, but I prefer Larabars.  Now, it’s 1:30 and I’m already sitting down to lunch!  Breakfast did not hold me over well at all.  Must be due to the lack of nuts, PB, and flax?  I decided to postpone my workout until about 5:00 because I was too hungry to go before lunch, and I will spend my time until then studying for an archaeology exam that is tomorrow and beginning a speech due on Tuesday!  I plan on turning on the tv from 3-5 to watch Yes, Dear and King of Queens!  If they are reruns I will be able to focus on my work, but I have the rest of the day to do that because I am done with my one and only class on Wednesdays.   :-) My favorite day besides the weekend of course.  So for lunch I had 1.5 cups of Kashi GoLean Crunch! cereal w/1 cup soymilk, a very sweet juicy orange, and a cup of chamomile tea!  Time to get to work!
