I went to the gym this afternoon and had a great workout.  I did 30 minutes on the treadmill running, 10 minutes stairmaster, pushups, abs, stretching, and finished up with 10 minutes on ET.  I had lunch right after.  I defrosted some of my dill tahini veggies from Thursday’s dinner and put it in two La Tortilla FactoryGarlic and Herb Tortillas with spinach and capers!  I had some more plain nonfat yogurt (a cup) on the side…bleh, carrots and celery, and a mango!!  I only have about a cup of yogurt left though!  My lunch was 550 calories, 14 g fat, 26 g fiber, and 30 g protein.  

 

I decided to make something new for dinner because I don’t have much leftovers thanks to finishing many of them over the weekend!  YAY!  I decided on Snobby Joes from Veganomicon!  I LOVED this recipe!  It turned out great.  I omitted the oil and salt though and served my 1 cup portion (1/5 of the recipe) on a slice of Ezekiel bread.  I froze the rest and had sweet potato dollar fries (with some S&P baked in oven and microwave to speed up the process) and half of an avocado topped with some snobby joe mix on the side.  This was a fun meal :)  and came in at 450 calories, 7 g fat, 21 g fiber, and 17 g protein.  

I finished dinner just in time to watch Penguin’s game three in the second series of the playoffs!  We won again and are now 7-0 in the playoffs (best record in the NHL so far!!)!   :D   I had a snack during the second intermission.  I popped a banana bread muffin in the microwave for 35 seconds and had that with a blob (2 Tbsp) of Peanut butter!  Yum!  My snack was 363 calories, 17 g fat, 6 g fiber, and 11 g protein.  

My goodness I love peanut butter!

Again, I was busy!  About two hours after breakfast I went outside for another walk/run!  It was great :)  I would say I ran about 3 miles total and walked 2.  Then, I came back and made lunch.  It was the same as yesterday.  Two slices of fiber and flax bread with V’con hummus, spinach, and tomato; the rest of my cabbage, and strawberries.  I took the photo in front of my sister and she thought I was nuts and it was soo funny that I do this.  Haha.  

After I ate, I began cooking dinner.  I made Veganomicon’s Pumpkin Baked Ziti with caramelized onions and sage crumb topping.  This recipe did NOT disappoint!  I loved everything about it!  I halved the recipe this time and ate one quarter of the halved recipe.  Unfortunately I probably ate this in about 5 minutes because I was rushed trying to get out the door to go see a play with the boy.  We went into Pittsburgh and saw Ultima Vez.  It was pretty good.  I didn’t really understand what it was about completely, but I appreciated the dancing as I was a dancer for 18 years.  I miss it :(  While waiting to go into the play I ate one of my banana bread muffins!!  (sorry no picture again)  So, we had a fun night!  I’ll enjoy another portion today for dinner especially since I won’t have the time to make something else since I am dedicating myself to studying, and well…the gym shortly and this for a bit too of course!  It is not a nice day.  I guess that’s a good thing, so I will not be as tempted to stray from studying.  I won’t mind being in the gym since I enjoyed the past two days with a great outdoor workout!

My portion (about 580 calories)…This recipe isn’t exactly photo friendly.  It doesn’t help that my picture is blurry either. :(

This morning I made myself some rolled oats.  I cooked them with 3/4 cup water and 1/2 cup soy milk, a sliced banana, cinnamon, strawberries mixed and on top, and 2 Tbsp flaxseed meal.  Very good!  

I’m off to study all day long!  (But I will be back to post at some point!!)

Sorry I haven’t blogged in soo long!!  I had to wait until I got home last week to get my camera since I can’t use my phone anymore to take pictures, but then I ended up going to my boyfriend’s college to stay with him for the weekend.  So, here I am!  The past two days I ate pumpkin oats, PB and J sandwiches on Ezekiel bread, grapefruit, strawberries, raw veggies (carrots, celery, tomatoes, cucumbers), garden salad, chickpea cutlets, quinoa, spinach, kale, and blueberry muffins for snacks!  I made all that food to take with me for the weekend because he doesn’t have much of anything in his room, and I can’t live on takeout for three days plus it’s expensive!  He and I went for a 3 mile run yesterday morning and it was great!! Such a nice change from being inside of a gym all the time!  On my way home today I stopped at the gym, ran three miles on the treadmill, and did 20 on the ET.  I made a PB and J sandwich with my leftover food to fuel me through my workout at 3 (I ate breakfast at 11 am) cuz we slept in! haha.  I ate it in my car in the parking lot though not while driving :)  When I came home I had a nice big bowl of strawberries.  Then for dinner, I made Veganomicon’s spaghetti with beanballs.  It was very good!!  I made the beanballs with pinto beans because I did not have any kidney beans on hand.  Also, I think next time I will bake these in the oven because they didn’t seem to be cooked enough.  I didn’t feel like heating up the house with the oven though.  I could have cooked them longer in the skillet, but I was getting a little impatient.  I cooked some spinach until it was wilted in a pan and sprinkled some lemon seasoning on it to have on the side of my spaghetti.  It sure filled me up nicely :)  I munched on baby carrots while cooking as well, and for snack I ate two of my blueberry oat bran muffins with a glass of soymilk.  Yumm!  

Oh and Skinny Bitch….I got the book from the library on Wednesday, read 100 pages of it, then read bits of it in the spare time I had on Thursday, and Saturday.  I finished it last night!  It was such a fun read.  I loved it.  I agree with so much of the stuff they talk about.  I know some people don’t like the tone of the book, but I thought it was very funny.  And they wrote it like that on purpose.  A lot of the stuff is just reality.  My sister wants to read it!  Yay.  Wonder if she’ll go vegan..or at maybe just eat less meat and dairy.  I tried telling my dad about all of the horrible things that go on in factory farms and he said he’s been eating meat his whole life and won’t ever stop.  Oh well.  Haha.  I’m not trying to change anybody, I just believe that most people don’t know what goes on at all, and if they did they would probably change their diets.  It is really very disturbing to me, and why should I eat animals or animal products when I can eat a perfectly healthy diet without hurting poor innocent animals?  There is no reason good enough or really no reason at all.  

I am going to try my best to take pictures, but as I am new to this whole blogging and taking pictures of my food thing, I feel a little crazy if people see me taking pictures of my food.  Ah.  For those of you who are about my age/live with your parents, how does your family feel about you taking food pictures?  Time to catch up on blogs and do some studying!!  Have a fantastic night everyone!!  :) 

WOW!  Dinner was soooo good!  I made Veganomicon’s Spaghetti Squash Mexicana with Tropical Avocado Salsa.  It was perfect, and the flavors were great.  In it was spaghetti squash, corn, black beans, onions, jalapenos, vegetable oil, chili powder, cinnamon, and some other spices.  The salsa topping was served chilled (mango, tomatoes, avocado). :) I’m going to have to eat this for the next few days though so it doesn’t go to waste :( I don’t really mind though because I loved it soo much.  I made the mango version salsa.  Yumm!  I am going to need a snack though later because even though this was very high in volume (a definite plus in my book), it was only about 300 calories for the whole bowl I ate!!!  It was extremely satisfying.  I cannot say enough about this book.  So happy I bought it!  At the gym at 4 I did 40 minutes ET and 10 treadmill both moderate and a little intense on the treadmill running.  I did some stretching afterwards, pushups, and sit ups.  Yay for me!  Unfortunately, my e-mail started acting goofy, and 

 

Today has been the best day ever in a while food wise!  I LOVED the chickpea cutlets from Veganomicon!  They are so simple to make and sooo delicious!  I didn’t know what to expect in terms of texture and flavor, and I loved both!  They were surprisingly very chewy.  Did not disappoint!  :-)  I topped my cutlet with a blob of spicy horseradish mustard.  The flavors went together very nicely.  I sauteed some brussels sprouts in a tiny bit of EVOO with fresh garlic.  I added oregano, basil, thyme, lemon juice, and lemon seasoning.  They were excellent!  To round out this meal I cooked a serving of quinoa and tossed in some leftover spinach from last nights dinner.  I added the same spices to this mixture, and again…yumm!  I was extremely pleased with this dinner and am sooo satisfied right now and soo happy I have tons of energy! haha  ……but…Time to go study now :-(  way to ruin the mood.
